I say "ma-chur". Personally, I blame my Scottish accent, or maybe this is just the correct way to pronounce mature. Saying it like "ma-toor" just makes me sounds like I've got a stick up m'posh arse.

Saying stuff like "mature chedder" probably doesn't help. Two 'ch' sounds just roll off the tongue better when paired together.

Actually I put emphasis on the t.

Ma-chur wouldn't really cut it since you leave the t out.

More liek mat-chur. But what do I know, I'm a crazy Swede.
