Long story short, can i retexture monsters, say a summoner (A black summoner with crimson lines would look awesome)

Yeah, they should be in the texture list like everything else. Why not take a look?

The summoner probably uses multiple textures. Also check the Alpha when you change a texture - cause the summoner has a Alpha enabled texture(s).
