If you mean the butler, his name is Jasper. And I highly doubt a simple butler would be the mentor of a great Hero and king.

well, with fable tradition, you start off as a kid, then someone dies, then someone looks after your, like the guildmaster or theresa, so walter will probably take you in when your father dies or something.
(i'm not sure if there is any definite evidence he is your mentor?, but it is confirmed that you will have a mentor)

he looks like he is an ex-red coat though, (welley soldier guard) and we have seen him follow the player in a few old screenshots, and in the e3 demo, so that is quite different from the regular mentor position.
