To sacrifice people, get them to follow you, go to the Temple, positon them in front of the wheel and pull the lever i believe.

When is the "magic hour" of sacrifise? I know its midnight.. but how can I tell? I mean have I missed some sort of clock I can look at?

Pause the game, look at the top right hand side of the screen, there's a clock.
