okay so on one of my profiles, Giles' farm is just a small shack and he is buried outside along with the key to his cellar. but on that file my dog is dead, so i made a new one to get the enforcer. now on my new file, Giles' farm is a bunch of buildings, and i don't know how to get his key.

Ok you decided to save giles. You have to buy his farm which has grown and you will recieve the key. Then go to the barn and there will be a trapdoor. Go down there and you will find the cellar.

You can still get the key after Giles is dead, even if your dog is already gone. It's one of the few buried items in Fable 2 that your dog doesn't need to find for you. Just stand on top of the grave and use your spade.
