It was at IGN, in one of the videos there. I don't have time to search them out. There's been to many. Are the E3 videos here? It might have been one of them, too.

well i'm not entirely sure it was a bookstore, just a store that sold books among other things.

there's the video.
at 1:00 they go into what looks like a store. don't know if it's a bookstore, but there are bookshelves which get set on fire.

Found this old article, where they state that enviromental kills and flourishes are still there:

For example, for a melee-oriented character you can spend points on upgrading several different areas, including flourishes, environmental kills, and combos.
