I am wondering in general of changes in the creature hobbes for Fable 3.
(New classes, behavior, etc.)

From what we've seen:

Mage Hobbes are practically unchanged

Warrior Hobbes are now dressed as the military.

They're generally tougher.

This isn't related buuuut... asking for reputation will have the opposite effect. Not only that but it has absolutely no effect and you gain nothing from it.

I beg to differ. Lynching uses rope, ropes tend to break. Those guillotines will cut through for a long before needing to be sharpened but... that's completely optional. I mean, so what if you have to drop it a few extra times?
