Things I would LIKE to see in Fable 2
1. Animals! You should be able to choose your companion (if any) and customize it like your character (clothings and what-have-yous) and it'd be cool to own things like a horse for faster travel or some sheep/chickens for some extra cash, and depending on your alignment they would change...I hope you get the idea.
2. Better voices (and more of them)! The same couple of voices that they used in Fable and the funky accents that made them almost impossible to understand at times really took away from the game for me...and they always sounded like they were shouting or something.
3. When they say you can own a castle, I'd like to see a real castle. Not that one hallway one room thing Lady Grey had going on. On that note, it'd be cool if you could actually choose types of furniture in your house and arrange it where you like. Or for those who'd rather not bother, there would be an automatic feature.
4. More variety in NPCs and their personalities, AI, and clothing. And voices. Please.
5. I want to feel like I'm really affecting the world as I move about it. I noticed in the first one that for all you can do, the plot is still very linear and the ending is basically either happy or not. I'd like to see the plot branching around more and have multiple endings, and above all else the game to change as I go. For example, in Fable: The Lost Chapters when I ended up getting rid of Lady Grey to become mayor of Bowerstone...nothing changed, at all. Except she wasn't there. No discounts, not even a "good afternoon mayor" from an NPC.
6. More towns with completely unique people, flairs, items, and even cultures. On that note, they should have evil towns and good towns. It got annoying getting screamed at most everywhere I went in the first one, just because I had horns and a huge bloody sword...
7. Interesting diseases/conditions/whatever that your character can become afflicted with. How cool would it be to transform into a balverine?
8. Weather! Every region had it's own thing going on all the time and it'd be nice to see some change. And it would be really neat if somewhere north you could see an aurora borealis.
9. A larger variety of side quests (and now jobs) your character can do to take some time off and make some extra money. Some cool jobs would be architecht, painter, brothel owner, torture chamber master, florist...etc

Things I DON'T want
1. Degradeable weapons and armor. I'm sorry...but this is just tedious and pointless to me, not to mention a waste of money. I like having to not worry about how many points my sword has left before snapping...
2. Overly realistic stats like fatigue/hunger/sleep/over encumberment. Trust me, I'm all for realism, but sometimes it's just overbearing and you spend too much of the game just keeping your character up and running.
3. To go bald because I'm evil. If I'm evil, I want to look good doing it. And having hair would be nice.
4. To work as hard as I did in Fable just to get a sword I can't use and can't intimidate people with.
