I'm sure Steve mumbles on purpose to wind me up. I cannot hear a word he says half the time and then when I do ask him to repeat it, he goes even quieter until I get so fed up I have a tantrum.

Go for Outlaw Star, you won't be disappointed. There's also Samurai Champloo which was created by Shinichiro (the mastermind behind Cowboy Bebop) if you haven't seen that one yet.
